At Restaurant Punta Spalmatore, a little 'Usticese cuisine':
Here the products from the land and the fish from the sea, give rise to a rich and varied cuisine with Mediterranean flavours and odours.
A feast of delicacies to be discovered: the eggplant parmigiana, pasta alla norma, caponata (capunata), anelletti baked pasta (anellietti or 'furnu), pasta with sardines (ch'i Sardinian pasta), lentil soup, spaghetti with salted anchovies and pan toasted crumbs, pasta with cauliflower, raisins, pine nuts and toasted bread crumbs (ch'i pasta vruoccula arriminati), spaghetti with squid, spaghetti with redfish, fish soup, swordfish rolls with breadcrumbs, swordfish Sicilian pasta with sardines, squid ink spaghetti (or 'niuru de Sicci), pasta with fennel (co' Finocchiu Rizzu) , tuna meatballs, the bean patties, fenne patties , the lentil meatballs, eggplant meatballs, sardine meatballs (Sardinian purpiett'i), fried fish with squid, marinated shrimp, tartare fish, risotto with chicory, fried squid and shrimp, seafood ravioli and lobster stew.
And what about the sweets and desserts: cake with almond paste, cake with ricotta, Sicilian brioches with ice cream, cannoli (cannualu), cassata, pastry of St. Joseph, marzipan fruit, watermelon delight.
It may seem strange but here in Ustica there are no seafood (clams, cockles etc) or mussels and very rarely octopus, sea urchins, and squid.
The chef of the restaurant is Sicilian D.O.C. and in his delicacies there is always a bit of the products of Ustica and the Ustica cuisine.
Among the wines we suggest you enjoy the zibibbo of Hibiscus (Zhabib) and Muscat of Alexandria Passito cultivated by Mancuso in Punta Spalmatore, both wines, with distinctive flavours evoke the complexity and beauty of the whole territory.
